Environmental Impact Assessment of Frozen Mackerel Considering Freshness by Impedance Measurement

In this research, the relationship between the eco-burden of thawing frozen food (e.g., frozen Mackerel) and its quality was analyzed. In particular. the impedance (resistance) which corresponds with its quality was measured, and the eco-index in consideration of the quality was developed.
This study is collaborative one with Assoc. Prof. Katayama who belongs to electrical engineering and the research activity was executed under the cross-disciplinary course.
